Bebinca Recipe

Bebinca (also known as bibik / bebinka) is a type of pudding and a traditional Goan dessert. The dessert has to be baked in layers and traditionally has 16 layers. Cooking the perfect bebinca is an art for the cook, so as to ensure that all layers are cooked equally. it'll put inches on you waistline if you develop a taste for it, but it's not to be missed.

Ingredients for Bebinca Recipe:

  1. Plain Flour - 250 gms
  2. Coconut Milk - 700 ml
  3. Sugar - 2 cups
  4. Egg Yolks - 2 dozen
  5. Ghee (Clarified Butter) - 1 1/2 cups
  6. Almond slivers to garnish

Preparation of Bebinca Recipe:

  1. Mix the coconut milk & sugar together and stir till the sugar is completely dissolved.
  2. In another bowl, whisk the egg yolks till creamy.
  3. Add the coconut milk to it & mix well.
  4. Add all the flour to this, a little at a time and make sure that no lumps are left.
  5. Pre-heat your grill.
  6. Put a tablespoonful of ghee in a baking pan at least 6" deep. Put this pan under the grill till the ghee melts.
  7. Take it out from under the grill and pour some of the prepared batter into it to form a 1/4" thick layer.
  8. Put back under the grill and cook till the top is golden.
  9. Remove from under the grill & immediately add another tablespoonful of ghee on the previous layer.
  10. Now pour another layer of batter of the same thickness as the previous one. Cook under the grill till golden.
  11. Keep repeating the layering process till all the batter is used up.
  12. The last layer must be ghee.
  13. When it is done, turn the Bebinca over on a flat dish and garnish with almond slivers.
  14. Cut into slices and serve warm or cool.
